Some dishes carry a memory in every bite—childhood moments, a cozy summer evening, or the scent of home. Spaghetti Bolognese is exactly that kind of dish. The harmony of tomatoes, ground beef, and herbs rising with steam from the pot brings instant comfort. The first time I tasted Bolognese sauce, my mother had made it. I couldn’t even pronounce its name back then, but I still remember being amazed at how perfectly that rich, meaty, tomato-based sauce paired with spaghetti. One forkful, and suddenly our dinner table felt like a scene from an old Italian movie.
This iconic sauce comes from Bologna, Italy, and is known locally as Ragù alla Bolognese. While it has taken on many forms around the world, the true version is slow-cooked, hearty, and full of depth.
Authentic Bolognese isn’t just meat and tomato. It’s built on a base of finely chopped onion, carrot, and celery, cooked down slowly to draw out their natural sweetness. Some traditional recipes even include a splash of milk to soften the acidity and create a velvety texture. Whether made with a twist or in its purest form, it’s always a hug in a bowl.
300g ground beef
1 onion
1 carrot
1 celery stalk (optional)
2 garlic cloves
2 tbsp olive oil
400g crushed tomatoes (or homemade preserved tomatoes)
1 tbsp tomato paste
Salt, black pepper
Dried oregano or bay leaf (optional)
100ml milk (optional, but traditional)
250g spaghetti
Grated Parmesan cheese (or aged cheddar as a substitute)
Heat olive oil in a pan. Add finely chopped onion, garlic, and carrot. Sauté until soft. Add the ground beef and cook until browned. Stir in tomato paste and crushed tomatoes. If using, add the milk and herbs. Season with salt and pepper. Let it simmer on low heat for at least 30 minutes. Meanwhile, cook the spaghetti in salted boiling water until al dente. Drain and plate. Pour the sauce over the pasta and finish with a generous sprinkle of Parmesan cheese.
Low and slow cooking brings out deeper flavor in the sauce.
Don’t skip the vegetable base—it gives body and sweetness to the dish.
A touch of milk adds creaminess and balances acidity.
If you don’t have Parmesan, aged cheddar can work—but real Parmesan brings you closer to the authentic Italian taste.
